Pianoteq's MIDI recorder/player will record the MIDI channel number with the MIDI note-on, note-off and other events. So if your controller is configured to transmit on MIDI channel 5, the Pianoteq MIDI recorder will record and play back the information it recorded, on MIDI channel 5.
If you set Pianoteq's Options-->MIDI-->Notes Channel to "Any," Pianoteq will respond to and produce audio for MIDI events (played live or recorded into a .mid file) regardless of MIDI channel, or rather, on any MIDI channel.
However, if these comments seem irrelevant, it may not be quite clear exactly what you are trying to achieve, and why.
