In the linux version, this behavior seems to be hard-coded in Pianoteq, so you cannot stop it except by asking the Pianoteq team to add a configuration option for this. (And this would actually be a useful feature IMHO.)
With a mouse, if you move the pointer against the top of the screen, the menu bar will re-appear (however I notice an overlap with a system bar if your desktop is configured to always show that). Maybe you can mimick this pointing 'gesture' with the touchscreen?
A possible work-around is to configure your desktop to show a traditional task bar (panel), because you can then close Pianoteq from the context menu, and upon re-starting it it will no longer be in full-screen mode (of course it is not fully full-screen anymore anyways if you have a panel that is always foregrounded)...
