first: use VST/AU Hosts over DAWs. They have smaller latencys. ( Can´t speak for Reaper tough)
to start: there is a Freeware called H-AU. It is good ! ..i used to use it.

You can have 4 sintruments in parallel, plus additional 3 sloits for FX per instrument, plus 4 master FX.
It can load only AU plugins, and no VSTs ( should make NO difference in most cases)
you even can map 16 Hardware controls/CCs to your plgunins for manual control.
Drawback: you can´t map those HW controls to the volume fader
i don´t knwo about compatibility with the newest M1 macs ( i used it on high sierra)
H-AU is super simple to learn und to create your "patches" with, just save them, and load as your needs are...........
Also is the midi HW mapping super simple to grasp and to do !
want a better Host which allows for more ?
there is gig performer 3, which "is in my opinion" right now the edit: "coming up standard" for VST/AU Hosts. (for live on stage or in the studio)

It has in the begin a small learning curve, especially if you want to map Harware controllers.
GP3 has super small latencys, is suoper stable, allows for extremly complex patchings and audio routongs,
AND: is super simple learn overall.
Especially if you leav out midid mapping for the begin.
the midi mapping is also easy, if you once grasped the concept, and its super powerful.
it is alos sold over plgin alliance, and there are special sales when you can have it for 99$ ( just subscribe to the news letter)
I see quite some people coming over to the GP3 from the other two, so far co-ruling VST/AU Hosts.
GP3 is SUPER POWERFUL, while it is also the perfect choice for people who just want to start with simple things !
believe me: if one has grasped how powerfull it is to combine VST-instruments with others, and/or ro combine it with VST-FX, you will continue to expand.
works with the new M1 mac on rosetta.
for startes on mac though: H-AU...........get there a first inspiration.
also to mention:
you finally can just load several standalone applications at once in your PC, at least its working on a mac,
and do nothing other than set the out/audio interface as you anyway would do.
they will play in parallel just fine !
there is even no need for any plugin host
control the volume just on each instrument on its own
its my common way to play my instruments loaded in such hosts, and ended after a long surch at GP3,
and found there finally a solution that allows to do the things i want to do,
while it was easy and inspiring to dive into it ( orhers i demoed were not )
