Yes, certainly Pianoteq can already do this for all parameters in 'note edit'.
In Pianoteq Pro, that's something you could work to do in 'note edit'. You can draw with a pen tool across all keys for any kind of parameter, from velocity, volume, impedance etc.
If you want to just make a nice upward line for hammer hardness you just select the params (piano, mezzo & forte) one at a time, then for each, draw your lines from whatever note to whatever note and hear the difference immediately
Some tools allow deep changes per note (like 'spectrum profile') - so apart from things like copy and paste, you can also edit all notes by editing once - experimenting like this is always the way to come up with your own custom sounds.
If you want your drawn lines to be smoother, a lot of params have 'control handles', so you can simply drag those, and the straight lines follow.
You could make any note, or any groups of notes totally different to each other.
In Pianoteq Standard, you can do this for volume and tuning to see it it's your kind of thing and if so, you might be ready for Pro.
Some more notes about making big changes with note edit - Chick Corea sends that range mentioned in the thread, to an amp with custom EQ - so bearing in mind, it's not totally just his keyboard you're modelling - you might get close to it (there's 'amp' effect in Pianoteq). It's an amazing amount of fun to make Pianoteq presets like this. So real - like no other VSTi, to me. You can make it sound like anything in a DAW eg. for recording etc.
Definitely check the manual (section about note edit) to see screen grabs and learn more about out how it works.
