.. buy pianoteq play from, say, thomann. Will I be able to download the linux version later?

Yes, you would have to register Pianoteq, and you would get access to User Area from the main Pianoteq website, and in there you'd be able to download 32-bit and 64-bit, Windows, OSX (only 32-bit) and Linux builds. Oh, and free addons
