How can you enjoy the sound of VST pianos through headphones when you own a six-foot grand piano?
I’ve tried the Pianoteq 9 (trial), Garritan CFX, and Ivory 3 German D, but they all sounded synthetic through an Beyerdynamic DT 900 Pro X.
Do you also find that playing a VST feels less like a piano and more like a different instrument entirely?

I don't think software pianos will ever sound like the real thing, especially given the lack of tactile vibrations. There are also a lot of factors like mic setting, room acoustics, etc, to really compare. At the end of the day, enjoy what sounds best for you. As for me, I am perfectly fine with Pianoteq.
I'm in the same (fortunate) situation (old but nice 6' grand), PTQ comes in when I have to record something, not for practice, nothing can replace the physical sensation you get from a "real" instrument, it's the same with a guitar or any other instrument. But when you're less fortunate, PTQ is the best you can get.

You’d need some serious speakers to get some of the feel back.
I can get Pianoteq to sound like recordings using headphones but not just through the bare instrument, I use a DAW and several plugins

While I 100% concur, I do have a take on real, acoustic piano vs virtual piano:
Acquire, for example, your favorite acoustic grand (e.g., Steinway, Bosendorfer, Bechstein, Fazioli et al). Record it on the world's best 2" tape, through a Neve or SSL console, using Neumann and/or AKG microphones.
Now you're listening to an *electric piano*; therefore, no playback will *ever* match the (altogether subjective) excellence of an acoustic instrument
That said, I will continue to savor my virtual piano library, which includes Pianoteq 9
