I don't know how the various piano- and organ-models are created. Perhaps it requires special software.
But if it isn't possible, is it something that might become possible at some point?

First we need to separate sampling and modeling virtual instruments. Pianoteq is modeling piano, that means program use specific mathematics algorithms to make piano sound. More information about this you can find on this site. To make modeling instrument require lots of knowledge including both mastering acoustic instrument engineering and mathematics. Because of that there are so little modeling instruments in the market. The other side is sampling. Yes, you can do that, its not easy to make serious sampling instrument, there are lots of work to make it good, but is doable. If you have microphone some basic stuff (for practice) to make instrument from any sound source you can learn fast through specific program. One of them I mention here. For serious instrument you need acoustic instrument as a main (yours or to rent studio with instrument), good gear (microphones etc) to record quality samples of every note of that instrument, you need to learn scripting (for example for NI Kontakt software) to make it playable. All about that (books, video courses) you can find easy. Just google it. There are tons of sampling instruments of all kind in the market today. Most of them are made through NI Kontakt software as a standard. As far as I know there are free program alternatives also.
The good thing is, inside Pianoteq and instruments it have, you can change lots of things to make your specific instrument in a much easier way.
