Apologize for my poor knowledge about Pianoteq functionalities and particularly about Layers.
My question is: anyone know if & how is possible to assigne different MIDI channels to each layer ?

As far as I know it is not possible . You can achieve it by running two instances of pianoteq with the instruments you want to layer and assign a different channel to each .
It is possible, go to the Layers panel and click the button located to the right of "M" and "S" to select the MIDI Channel assigned to each layer.
