The problem was the calibration assistant had a curve that was making it behave as I described.
Once I set the curve to a straight linear line the pedal behaved as expected.

However, I am not experiencing any change in the sound of the sustain.
Based on my upright piano I expect that I should get some sustain but not as much as fully depressed and that this should gradually increase as I press the pedal further down.
What I am experiencing however, is no change in sustain (despite seeing the pedal gradually move down in the UI), it sounds like when sustain is off, and then sustain 100% on once it is fully depressed.
Doesn't seem right to me. Am I missing something else.

I tested with the Steinway D, and the Petrof piano
