is alt - (left) click supposed to do this on Linux?  i just tried and it didn't seem to work.  perhaps i'm misunderstanding what to do.

No, it's a custom action, which probably isn't covered by the old principles of User Interaction.
You are supposed to hold ALT and then click onto the slider.

As a standard consideration, every mouse action has to be doable on the Keyboard.

Could be a way to achieve that, but in that case it's probably easier to double click the slider and a panel will open up and press "reset" perhaps? I've just found out by experimenting too, but I have no idea how the guy on YT is resetting the silder quickly by pressing a button on the keyboard...

Not a fan of any mouse or touch operation.
If you are about to do so much effort, you also can setup a seperate MIDI device with (physical) knobs and sliders that store a value.
Those you can then press to restore individual settings and you don't even need the PianoTeq GUI anymore cause you have the physical knobs.

There is a MIDI (learn) option in PianoTeq.

What I saw in that guy's video of pianoteq is that he moved a cursor to a side with his mouse, then it looked like he was pressing a key on the keyboard and the cursor went instantly back to its original position. I was wondering if anybody knows the shurtcut, if there's such thing.

Post the video. If it's the mouse cursor, it can't be a functionality of PianoTeq. That would be more like automation a la Autohotkey...

I saw "SamTheBeardGuy" doing it on a pianoteq video on YouTube but it won't show what he presses on the keyboard, if so. So I guess it's possible. The reason why I need this is for when I edit parameters looking for a specific tone and I want to reset one of them but can't remember its default value.

Well, you COULD freeze all parameters but one and then reset it. That would only reset 1 parameter.
Perhaps he did just do undo. That would be CTRL+Z or APPLE+Z on macOS
