Ah right! Prerecording the pedal part and playing it back step by step while playing in real-time the other parts should work! Like a one pedal organ pedalboard...
You need to use a switched pedal though, not a continuous one or you'll get a lot of notes. I tried it and even that is tricky since you advance on pedal down AND pedal up...
There is a way to make it work correctly and that is by setting the pedal values (with a right-click) as "From 127 To 127" in the MIDI Mapping. That works for a continuous pedal also.
I posted this morning before I saw that you'd already said most of it already... I'll try the 127 to 127 tonight.

So by recording the pedal line into the PT standalone and then setting my middle pedal to play the current file step by step I can now (with a lot of practice) play my organ prelude! I use the middle pedal since on my keyboard it's set up as a switch whereas the LH pedal sends a stream of data which basically plays the MIDI according in one instantaneous burst. It's not ideal since putting my foot down plays one note, raising it plays the next, and the note lengths are determined by where the note-off comes in the MIDI file, but it's far preferable to playing alongside a recording and I don't have the time to dig into Max which looks wonderful, but I'd rather play the piano than master a new piece of software...
