I'm guessing you mean you are manipulating the sustain pedal (etc) in the Pianoteq user interface, but Logic never records and plays back those changes?
In this case you need to change the AU's automation mode in Logic. This is just above the pan control in the Logic channel strip for the instrument. Its probably set to "read" now meaning that Logic plays back its existing control data -- of which you haven't got any yet -- to the instrument. You can change this to "touch" or "latch" to have Logic record any changes. Googling "logic automation modes" will then fill you in on the differences between these modes and the other modes available.
