My favourite instrument at the moment is the M3 setting "Flamenco Sketches" but like you, I freeze the mic and reverb parameters from the M3 Recording setting.  Doing an A-B comparison between the two pianos, M3 "FS" version sounds more "real" to me than the straight recording presetand I'm contemplating tweaking the EQ in other areas to get closer to the sound I want (doing it with hammer hardness works for some pieces/styles but not others).
