I think you can still do it.

Yes, I think so.

Go to Options> MIDI> and Insert as many controls as you want.

No, all the Pianoteq pedals are progressive (provided that your hardware pedal is progressive).

Just realized, PTQ has no less than 10 different pedals als an option.
But how to control them with what hardware?
Usually a digital piano has 1, 2 or, at maximum 3 pedals.
OK, I could always reassign the 10 pedals to the 1 to 3 existing pedals,
but there should be an easier way to get them available.

AFAIK, only the Sustain pedal is continuous/progressive,
all the other pedals are just on/off switches, right?

So maybe I could use any MIDI (foot) switches, to control the on/off 9 pedals ?
(while of course having my ordinary sustain pedal already equipped with any keyboard)
