I have one piano keyboard, and one sustain pedal, but I like to play several different presets. So I think I would like to have a global velocity curve for the piano (and one for the pedal) and use it by default for every preset.

But this is not possible, because every preset includes velocity curves. I can save modified presets with the curves, or I can save the curves as a mini-preset, but I can't simply use the curves by default. Is that correct?
