Prior to tonight I never enjoyed using the stereo output setting. Tonight I think I may have found why:

Although choosing monophonic and stereophonic do not allow you to make any other adjustments, stereo output does get influenced by the "stereo width" setting. The issue is that there is no way to adjust stereo width from within the stereo settings – you have to first select either the binaural setting or the stereo recording setting in order to set the stereo width, and then go back into stereophonic to hear the results and see if you set it appropriately.

On my set-up, with the speakers to the sides of the piano, I have to reduce the stereo width to between 0.30 and 0.40 to get the most realistic player results.

Modartt, is there a way to allow the width to be set from within the stereophonic choice of output? It would certainly make things more direct.
