You can have a fixed velocity value (or limited range) by setting it with the Velocity curve. It is very quickly to make such a single note recording inside a Pianoteq using a <*> on your numpad by default or assigning any other key, or assigning a MIDI event. Just hitting a spacebar restarts and stops recorded notes.

Repeats of a single note with a fixed velocity is too weak material to evaluate current edits. And there is no universal solution with a fixed MIDI file. For example, if you adjust hammer hardness, you need a MIDI file with high dynamic range (by MIDI velocity). If you adjust stoccato sound, you need MIDI with a lot of stoccatos. If you adjust mics or spectrum to be closer to a external recording, the best choise is the MIDI of the recording. And so on.

For many cases default demo composition is ok to evaluate edits in real time.

If you need only single note repeats with a fixed velocity -- make the MIDI and set up it as default demo composition in preferences.

The advantage of having it done with a right click is that one could choose any note at any time, without having to load a MIDI file.

Might be nice to be able to click on a key and have the note repeatedly play, at a chosen velocity, while one experimented with various edits, such as spectrum profile edits or tuning, or anything else. One can, of course, create a MIDI file that plays a note again and again, but the idea here is to instead choose any note and have it repeatedly play until the player pressed, say, the space bar.

One can, of course, hit a note repeatedly on a MIDI keyboard, but then repeating the same velocity is difficult.

Such a feature would become still more valuable if one could choose two notes to repeat, or more, thus letting the user adjust triads or octaves?

Just right-click on a key to start the repeated note? Right-click again on another note, while holding down the Shift key, to add another note? Reverse the process to stop playback?

(Might be a feature that could be turned off, somewhere, by default, to prevent newcomers from accidentally triggering the repeated notes?)
