The comparison should be made under the same conditions. I suggest connecting the output of the computer's audio interface/soundcard running Organteq software to the input jacks of the organ console. In my case, it's a Sonus Viscount 60.
And based on my comparison, I don't find the Organteq to be better or worse than the Physis Viscount organs. They are two different instruments.
The Organteq doesn't simulate the action of a mechanical keyboard; it also has a different reverb effect, so for comparison, it's worth disabling the reverb in the software and using the Viscount's built-in reverb.
Here's a sample comparison of the two instruments using the method described above. It's not perfect, as the two versions use different solo voices (tongue in the Organteq and cornet in the Viscount).

But I see that you are using the old Organteq. I myself play with the new Organteq 2 which has an incredible number of new possibilities to adjust the sound among other things. As it says:

Everything in Organteq can be tweaked - from the composition of the organ to the sound of each pipe - making it possible to reproduce a wide variety of existing organs or to explore unknown musical lands.For example:

each stop can be voiced pipe-per-pipe:
volume
detune
brightness
air noise
wind jitter
chiff amount

And there are 36 german baroque stops and 39 french romantic stops
And 18 historical organs.

Organteq offers 74 unique stops and more than 4,000 pipes, inspired by the works of famous French builders from the Romantic period, such as A. Cavaillé-Coll, and by great German baroque builders, such as A. Schnitger, G. Silbermann, and T. Tröst.
Reproducing the typical and variable pipe attack transients chiff as well as the 3D configuration, where pipes are located in space according to their keyboards. Even the action noises from keys, stops and couplers are modelled. These were only some examples. The manual say it all.

The ”sound world” is different. My subjective opinion is that if Organteq sound is a bit hard or cold so is Organteq 2 a bit ”softer”.
I have recorded over 50 pieces with Organteq 2 so far and growing in the Forum and YT.

Perhaps another suggestion: Buy a second hand Heyligers electronic organ ('80 high quality product that will last several other decades, usually two wooden keyboards and a full 30 pedal board, all three made by renowned firms as Laukhuff. The internal contact can directly be used for midi-fication. Do it yourself took me about a month, with third manual added while maintaining the original analog instrument. https://heyligers-orgels.nl will gladly assist you if preferred.

Recently I tested a Johannus Studio 350 and a Gloria Optimus Physis plus, and both organs which cost between 7.200 and 9.500 Euro (!) sounded to me more like a harmonium than an organ!

I also tested the new Johannus Sonique which costs 12.000 Euro(!!!).
And this extremely expensive digital organ sounded a little bit better than my Organteq2 -setup.

But 12.000 Euro, this is the price of a used Bechstein upright piano in very well condition.
And then you have a real instrument under your fingers.
But the Johannus isn´t a real organ, it is only a digital clone of a real organ.

To get as close as possible to a real organ, I now ordered a Viscount Legend 25 midi basspedal for my two manual organteq2 setup, so that I can play the bassline like on a real organ.
My setup consists of:
- Korg Kross 2 workstation and masterkeyboard
- Nektar impact EXP 61 keyboard
- 4 Behringer MS 40 monitors
- Viscount legend 25 midi basspedal
- WIN 10 notebook
- Organteq2 software

And this setup sounds way better than the Gloria Optimus physis plus, which costs three times more than this Organteq2 setup!

I hope to bring up some recordings with this new setup soon!

Besides that, the Johannus Sonique 360 has only four organs sampled, Organteq2 has 50 different organs with physical modelling!
The Sonique has 45 Stops for each of the four organ, Organteq2 has also 45 Stops but in 50 different organs.

My setup costed me 2400 Euro (because I already had the two keyboards my notebook and two monitors).
The Johannus costs 12.400 Euro!!!
And with four monitors it sounds better than the Johannus with its 13 built in speakers!
Why? Because my studiomonitors sit in the height of my ears in front and beside of me.
In the Johannus they are bulit into the console, so that the sound comes from below and only in front of me.
