If I install Organteq, can I do something similar to switch between the piano and organ instruments? And how can I switch to string sounds?

I have to admit my ignorance of MIDI. Can I use key presets to select Pianoteq/Organteq instruments using MIDI commands?

You can assign these MIDI commands to the P-125's controls. Just go to the "Options" window and click on the "MIDI" tab on the right side of the screen. There, you will have many possibilities to create MIDI assignments for various commands, including choosing presets for your favorite instruments.

For more detailed information on how to proceed, I recommend that you read the Pianoteq manual.

yes this is the best and more versatile way for gigging , you can virtually map any pianoteq parameter on the fly and switch instruments with assignable CC commands . You can ever find pedal boards specially made to issue these controls by foot , which is sometimes necessary in some performances when you have to switch from one presets to the next . You can also create morphed instruments  to manage a smooth transition from one preset to the next   using an expression pedal mapped to the morphing % parameter .

I managed to use Cakewalk/BandLab as a VST host.
However, it's awkward to change the instrument on the fly while playing a song.
Can this be done from the keyboard, by pre-assigning keys to MIDI?
I need to look into this further
